Garlic Cauliflower Mash
Garlicky, buttery mashed cauliflower -- I love that it tastes like mashed potatoes!

- Steam cauliflower until very soft.
- In sauce pan, roast 2 Tbs butter and garlic on very low heat until golden brown. Remove garlic from pan, set aside.
- Place steamed cauliflower in food processor, with 1 Tbs butter, salt and pepper to taste. Grind until smooth.
- Add cauliflower to sauce pan that was used to roast garlic. Taste. Season with more butter, salt and pepper as needed. Heat through.
