Pick your favorite or a combination for easy delicious roasted vegetables!

Serves: 2-4
  • 3 cups raw vegetables, chopped
  • 2 Tbs Bacon Fat, melted
  • 1-2 cloves Garlic, minced
  • 1 tsp Sea Salt
  • 1 tsp Pepper
  1. Preheat oven to 400*
  2. Combine chopped vegetables in large bowl.
  3. Add bacon fat, garlic, sea salt and pepper.
  4. Stir to mix.
  5. Pour into baking pan covered in parchment paper (Makes for easier clean-up!)
  6. Cook for 30 mins, stirring twice.
This recipe works great with a single vegetable, such as brussels sprouts, tomatoes or asparagus, or a combination of vegetables. Always my favorite way to serve a variety of vegetables to my daughters and clean out the fridge at the same time -- carrots, broccoli, onion, mushrooms, tomato, squash, cabbage, zucchini, brussels sprouts and asparagus. Colorful for the eyes and the tastebuds.

Tasty for dinner or breakfast -- try them with bacon and fried eggs!
